Baked Sweet Potato Fries

The day I discovered sweet potatoes was definitely a turning point in my life. How did I survive all my life without this sweet, delicious and nutritious vegetable? Honestly, it baffles me. It has become a staple in my diet.

One baked sweet potato contains over twice the amount of vitamin A you need for the day!  Sweet Potatoes are complex carbohydrates that contain protein, which basically means you can eat plenty of these and not feel guilty at all :)

I’ve been making these simple sweet potato fries for years now, and it’s always a crowd pleaser!

Ingredients:

Sweet Potatoes (at least one per person)

  • Olive Oil (or coconut oil for a healthier option)

  • Salt, Pepper and Spices (I use Merkén, a Chilean spice, but it works well with cayenne pepper, paprika, curry powder, garlic powder, cumin… basically any spice you like!)

Instructions:

  1. Preheat oven to 230°C (450°F).

  2. You can peel potatoes or eat them with the skin on, either way is fine! If you decide to wash the potatoes, make sure to dry them well, if not, they’ll be soggy!

  3. Cut them into fry-shaped pieces. Make the sizes similar so they all bake evenly.

  4. Put the fries on a bowl or a plastic bag (or directly onto your baking sheet if you like) and add a few tablespoons of olive oil, enough to lightly coat the fries. Season with your spices and add salt and pepper. Mix/shake well, so all the fries are covered with olive oil and spices. If you added the fries to the baking sheet, you can use a brush to spread the oil and spices.

  5. Put the fries directly on a dark, non-stick baking sheet for best results (lining with aluminum foil produces mixed results and parchment paper can burn in the hot oven). Arrange your fries in a single layer and make sure they’re evenly spaced – no touching! otherwise they will never crisp up / they’ll get soggy!

  6. Bake fries for 15 minutes, then flip the fries so they can cook on both sides. Then bake for 10-15 more minutes. It’s important to bake them long enough, so that they have a crispy taste.
