Healthy & Delicious Banana Bread

I’ve decided to start sharing more recipes on here, cuz we all deserve to treat ourselves to yummy AND healthy desserts!

This has to be one of my favorite recipes. This banana bread has the perfect *moistness* and you’ll devour it in no time. I love baking this when I have lots of ripe bananas :)


Ingredients

  • 3 medium ripe bananas

  • 1/4 cup natural peanut butter

  • 2 eggs, room temperature*

  • 1 ½ tablespoons maple syrup 

  • ½ teaspoon vanilla essence

  • ½ cup coconut flour

  • 3/4 teaspoon cinnamon

  • ½ teaspoon baking soda

  • ½ teaspoon baking powder

  • 1/4 teaspoon sea salt

  • Dark chocolate chips

*Note: the original recipe calls for 2 eggs, but if you’re vegan like me, you can replace the eggs with CHIA EGGS. To make a chia egg, mix 1 tablespoon of chia seeds with 3 tablespoons water and let it sit for 5 minutes. Easy peasy!

Instructions

  1. Preheat oven to 180ºC (350ºF) and line a rectangular pan with parchment paper.

  2. In a bowl, combine coconut flour, cinnamon, baking powder, baking soda and salt. Mix well.

  3. In another bowl, mash bananas, or use a food processor/immersion blender.

  4. Add peanut butter, maple syrup and vanilla to bowl with bananas and whisk. Add eggs, whisk until everything is well combined.

  5. Add dry mixture to banana mixture and combine well. Add chocolate chips and mix.

  6. Pour batter into baking pan. Bake for 22-25 minutes.

  7. Remove from oven and let cool for 10 minutes before slicing it. I personally like it best after it’s been in the fridge for a few hours.

  8. Add fruits on top (optional) and ENJOY!
